100ml water
2 Stock cubes
Freash Thyme
Fresh Sage
Fresh Parsley
Fresh Rosemary
Juice of half an orange
1 tsp of ground black pepper
1 tbsp of soya sauce
1/4 cup brown sugar
2 tbsp of olive oil
Oranges cut in halves

Pre-heat oven at 190 degrees
Wipe your turkey dry inside and outside
Start making your rub by adding the water, stock, herbs, orange juice, pepper, sugar and soya sauce to a pot on the stove. The higher the heat the better the caramelising, keep stirring it. Remove all the remaining herbs and only use the liquid part to rub the turkey with on the inside and outside. Stuff the turkey with the oranges and onions. Put the turkey in the oven covered with foil. For the first 1 Kg, bake for 1 1/2 hour and then 20 min extra for every other kg Test your turkey with a skewer or thermometer by picking a hole through the thickest part. Clear juices mean your turkey is cooked thoroughly if using the thermometer a 70-degree result means it’s ready. By Basting your turkey and removing the foil you can cook it until golden brown
